Aimee Fisher was born in Rotorua and raised in Hastings, Fisher first represented her country as a teenager but her breakthrough year came in 2015, when she joined with Jaimee Lovett, Caitlin Ryan and Kayla Imrie in the K4.
Aimee joined Olympic debutant Lucy Matehaere in the Women's K2 in Paris. She also contested the women's K1 500, finishing fourth.
As the 2021 world champion, Aimee chose to withdraw from the Tokyo Olympic programme, needing some time out. At the end of 2023, she met with Canoe Racing New Zealand to express her desire to re-join the team and worked hard to achieve her qualification in both the K1-500m competing alongside Dame Lisa Carrington and the K2-500m with Lucy.
